WESTON, Conn. --- Imagine a rainbow cake topped with chocolate frosting that when you cut into it, features a cascade of M&M’s or Oreo stuffed cupcakes topped with chocolate frosting and Oreo crumbles.
For chocoholics, the looks on their faces is priceless when they see the final product, a mouthwatering ode to cake and candy.
At least that's been the experience of 18-year-old Rebi Narins, the mastermind behind these creations and the founder of REBakery , a business specializing in out-of-the-ordinary creations.
The self-taught baker said she always loved baking but never thought it would turn into a full-fledged business. She started with simple things -- cookies, brownies, and one-layer cakes -- until one snow day in February when she decided to challenge herself and make her her first five-layer cake -- the now infamous rainbow cake with M&Ms -- for her best friend Clemmie’s birthday.
"After the multitude of compliments and the amazed looks on people’s faces I knew I had found my passion," she said.
For weeks afterward, the Weston resident bookmarked thousands of links to recipes of cakes, cookies, truffles, and become infatuated with baking. She highlighted her creations on Instagram and soon gained an ardent following including folks from surrounding towns interested in buying her cakes.
REBakery -- a riff on her name -- was formed. That was February, 2015 and though she's now a freshman at Syracuse and has put the business on hold, it's still a passion of hers -- and something she plans to continue to do on breaks from school.
"Trust me, I would love to continue my baking while here at Syracuse but unfortunately with my super busy schedule I don’t have the time or a kitchen to bake in," said Narins who is majoring in the Inclusive Elementary and Special Education Program.
"REBakery is on hold while I'm at school but will be back in action when I'm home for the holidays."
