Where once folks cringed at the thought of raw fish, now they crave it with Fairfield County diners putting spicy salmon rolls and yellowtail scallion high on their list of “must haves.”

We asked – and you answered – giving us five of your favorite sushi restaurants. Grab your chopsticks and read below; each eatery is being profiled this week with the winner announced at the end of the month.

Toro, 28 Church Hill Rd., Newtown, (203) 364-0099

What Makes It Good: The funny and talented chefs who like to make off-menu creations like "Tuna Tower."

Diners Like: Specialty rolls like Beach Boy, made with crunchy eel and spicy tuna and Flag Pole, made with Cajun tuna, asparagus, yellowtail, salmon, eel, and salmon roe.

Worth Special Mention: One of the owners is always present on the floor to make sure everyone is taken care of. They will accommodate folks with gluten issues. The downstairs, where the sushi and other pan-Asian dishes are served, is quiet and intimate; while the upstairs, where the hibachi hi-jinks go on, is more lively.
