An inch of rich, all-natural The Farmer’s Cow Connecticut ice cream is nestled between two perfectly moist cookies made from scratch by Michelle Jaffee, owner of Sweet & Simple Bake Shop in Fairfield. Featured in five delectable flavor combinations, the sandwiches are a perfect pairing of taste and local business.
The Farmer’s Cow is a group of six family-owned dairy farms. Eight years ago, the farmers began selling milk from their Connecticut cows and The Farmer’s Cow was born. With a shared commitment to sustainable local agriculture and preserving farmland, they grow crops on more than 6,000 acres of farmland and milk over 2,300 cows every day of the year.
The Farmer's Cow has grown to offer an array of Made-in-Connecticut foods by partnering with other local farmers and family-run businesses. When the group decided to make cookie sandwiches with its all-natural ice cream, they searched all over the state for the perfect cookie. And, they found them at Sweet & Simple.
Located in Greenfield Hill section of Fairfield, Sweet & Simple is a quaint retail bake shop that prides itself on baking in small batches with fresh all-natural ingredients including fresh Connecticut eggs from The Farmer's Cow.
“There is an art to making a great ice cream sandwich. The ice cream should be just the right thickness, the cookies need to be moist with good texture and not crumble, plus, the flavors have to complement each other,” said Robin Chesmer, Managing Member of The Farmer’s Cow. “Sweet & Simple’s cookies are tasty and delicious. They are the perfect complement to our rich and creamy ice cream. Together, it’s just a handful of happiness!”

Developing the five flavor combinations was a delicate job that involved a lot of taste testing. The Farmer’s Cow selected four ice cream flavors to be featured in the sandwiches. Jaffee then recommended three cookie flavors to complement the distinct taste of each ice cream.

While oatmeal raisin is Chesmer’s favorite flavor, Jaffee is most proud of the chocolate sugar cookies. “When I didn’t have the perfect chocolate sugar cookie recipe, I developed one especially for The Farmer’s Cow. I absolutely love coming up with new recipes.”
Each ice cream sandwich from The Farmer’s Cow is individually-wrapped in bright packaging featuring the familiar cow. They are available for sale at independent grocers across Connecticut and of course you will also find them at Sweet & Simple Bake Shop in Fairfield and The Farmer’s Cow Calfé & Creamery in Mansfield, CT.
