Norwalk Chef Plans Lots Of Pork Belly At Greenwich Wine, Food Fest

NORWALK, Conn. -- Pat Pasarella of Bar Sugo in South Norwalk is one of 14 "Innovative Chefs" that will showcase their wares at The Greenwich WINE + FOOD Festival, running now through Saturday, Sept. 26.

Here, he answers a few burning questions.

Daily Voice: What will you be showcasing at the Festival?

Pat Pasarella: Pork belly and polenta with a 60-minute egg.

Daily Voice: What inspires you and your cooking?

Pat Pasarella: My inspiration is my family. I've been cooking with my mother and grandmother since I was very little; everything from learning how to make pasta, sauces to a variety of other dishes. 

My parents have a farm so I learned how to incorporate how to grow, harvest and cook with nature's bounty. At Bar Sugo, oftentimes I take classic dishes that my family taught me and add my own spin.

Daily Voice: Anything else to say about your style of cooking?

Pat Pasarella: I love braising all types of meat. It's the inspiration for my annual Bar Sugo Game Dinner because I love to experiment and cook with different meats and incorporate braised dishes on the menu as well.

Daily Voice: What can folks expect from you at The Greenwich WINE + FOOD Festival?

Pat Pasarella: Lots of pork belly!
