New Coffee Shop In Weston Welcomed As A New Hot Spot

WESTON, Conn. – When the J.K. Café opened at Weston’s Cobbs Mill Inn during the height of summer it wasn’t just a place for people to come and get coffee, it was a memorial to a life lost.

Owner of the Cobbs Mill Inn Elayne Cassara named the café after her son, John Kelly, who died seven years ago at age seven.  A lot of the toys that are scattered around the café used to belong to John Kelly and Cassara’s daughter, 12-year-old Jaelle.

“It’s so cool to see children playing with them,” Cassara said. “It’s all kind of in his honor.”

But it wasn’t easy getting the café open. Cassara worked for a year with the town before being able to open the doors to the café.

“It was difficult because we had a lot of opposition,” she said, and mainly because nothing like this had ever been opened in town before. There weren’t the regulations in place for her to just open a café.

“We don’t really have anything in Weston for the community to gather,” Cassara said. “We have a couple little things in town but aren’t really conducive to a leisurely community meeting.”

And she said that the community has really embraced the café since it’s opening in June. It’s fulfilling the purpose she hoped it would, with moms groups coming in and having their meetings as well as being a place for people to just come and work.

When it comes to the food almost everything is done in house, from the cold cuts they use in sandwiches to the muffins served in the morning.  The head chef for La Rue Elayne at Cobbs Mill Inn has been very supportive of the café, Cassara said, even staying late to make sure everything is ready for the morning.

“I want it to be like Starbucks, but better,” Cassara said.
