Briskets will be one of their most cooked meals along with pulled pork, mac-and-cheese, and “lots of authentic American food with a twist,” said Chris Sexton, manager of Hoodoo Brown BBQ located at 967 Ethan Allen Highway in Ridgefield. The new joint threw open its country-themed doors earlier this month.

After operating his own food catering business, owner Cody Sperry wanted to transition to running a restaurant. Sperry teamed with well-known barbecue pitmaster Nester Laracuente, whom he met online, and turned the idea into a reality.

They met among a large community of barbecue fans online and the relationship clicked.

After picking up a grill from Georgia, the two stopped in at barbecue joints, tasting their favorites and thinking of ideas of their own.

Sperry named his joint after Hoodoo Brown, a bank robber, cattle herder, justice of the peace, moonshiner and cook who epitomized life in the Wild West. He was the leader of the Dodge City Gang in Las Vegas, N.M., in 1879-80. He was nicknamed “the baddest cowboy of them all.”

Sperry started his apprenticeship on a Big Green Egg smoker. Laracuente, the pitmaster, cooks the barbecue low and slow, for up to 16 hours over aged hardwood on a custom Lang Smoker.

The two are serious barbecue lovers, and are willing to go over the top to create the perfect dish. The specialty brisket is plump and juicy, wrapped in a thick layer of salt and cracked black pepper sub.

The atmosphere makes diners feel like they are in Texas as they enjoy the aroma of the brisket cooking on the barbecue on the back porch. The interior is filled with Southern-style decorations and wooden tables. The bar is loaded with all the favorites.

“We even have specialty drinks, such as the Absolute Texas, that only we get in stock,” Sexton said.
